苦杏仁甙由龙胆二糖和苦杏仁睛组成的β-型糖苷，分子式：C20H27NO11，分子量：457.43。
其三水合物为斜方柱状结晶，熔点200，无水物熔点约有20，[α]：20D-42。1g可溶于12mlH2O，900ml乙醇及11ml乙醇，易溶于沸水。
